Buon appetito!<\/p>\n<p><strong>Ingredients:<\/strong><br \/>\n1\/2 cup extra virgin olive oil<br \/>\n5-10 cloves garlic finely chopped (adjust to taste)<br \/>\n1 can anchovies (2 oz., with liquid)<br \/>\n1\/2 to 1 tsp. red pepper -takes (more for extra zip)<br \/>\n1 1\/2 lb. fresh, chopped tomatoes (or two 28 oz. cans)<br \/>\n1 can black olives (coarsely chopped, preferably Kalamata)<br \/>\n2 T. capers<br \/>\nSalt &amp; Pepper to taste<br \/>\n1\/2 cup Italian parsley (chopped)<\/p>\n<p><strong>Procedure:<\/strong><br \/>\n1.  In skillet, heat olive oil and smash anchovies to create a paste.<br \/>\n2.  Add garlic and red pepper flakes.<br \/>\n3.  Toss in tomatoes and mix.<br \/>\n4.  Add olives, capers and parsley.<br \/>\n5.  Reduce heat for 1-2 hours. Simmer uncovered.<br \/>\n6.  Salt and pepper to taste.<\/p>\n<p>Serve on spaghetti or Penne pasta. Add grated parmesan cheese.
