{"id":817,"date":"2014-10-16T16:18:37","date_gmt":"2014-10-16T23:18:37","guid":{"rendered":"http:\/\/bargetto.com\/?p=817"},"modified":"2014-10-16T16:18:37","modified_gmt":"2014-10-16T23:18:37","slug":"lemon-basil-chicken","status":"publish","type":"post","link":"https:\/\/bargetto.com\/chaucers\/lemon-basil-chicken\/","title":{"rendered":"Lemon Basil Chicken"},"content":{"rendered":"<p><strong>by Patricia Ballard, Senior wine Counselor (retired)<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><br \/>\n8 chicken breast halves, skinned and boned<br \/>\n1\/4 cup cream<br \/>\n2 T. olive oil<br \/>\n1\/3 cup lemon basil leaves, chopped<br \/>\n2 T. butter<br \/>\n1\/2 tsp. fresh thyme leaves, minced<br \/>\n3\/4 cup Central Coast Chardonnay<br \/>\n1 tsp. fresh parsley, minced<br \/>\n1 T. fresh lemon juice<\/p>\n<p><strong>Procedure:<\/strong><br \/>\n1.   Place chicken breasts between sheets of plastic wrap<br \/>\n2.   Gently pound with wooden mallet until they are 1\/4&#8243; thick.<br \/>\n3.   Dredge each piece with salt and pepper.<br \/>\n4.   Heat a large skillet. Add olive oil and butter.<br \/>\n5.   When butter melts add the chicken and cook for no more than one minute each side.<br \/>\n6.   Remove chicken to a platter in a 250\u00b0 oven to finish cooking.<br \/>\n7.   Deglaze the skillet with the wine and lemon juice and stir to loosen any browned particles.<br \/>\n8.   Boil the wine until reduced by half.<br \/>\n9.   Add the cream, lemon basil, thyme and parsley.<br \/>\n10.  Boil until slightly thickened.<br \/>\n11.
