Carignane<br \/>\n1 1\/2 oz. red wine vinegar<br \/>\n1 oz.sugar<br \/>\n1 oz.red currant jelly*<br \/>\n1 stick cinnamon<br \/>\n1 Clove<br \/>\n1 bay leaf<br \/>\n1\/2 oz. corn starch<br \/>\n1 lb. red cabbage<br \/>\nsalt and pepper to taste<\/p>\n<p>*Any tart jelly would work.<\/p>\n<p><strong>Procedure:<\/strong><br \/>\n1.  Slowly sweat onions and apples in oil.<br \/>\n2.  Add liquid ingredients and sugar.<br \/>\n3.  Add cabbage and seasonings.<br \/>\n4.  Cover pan and braise mixture until apples are tender (8 to 10 minutes). Make sure that liquid does not completely evaporate.<br \/>\n5.  When cooked mix corn starch with cold water or wine.<br \/>\n6.  When boiling add to thicken.<br \/>\n7.  Adjust seasoning with salt and pepper to taste.<br \/>\n8.
