{"id":877,"date":"2014-10-17T11:14:27","date_gmt":"2014-10-17T18:14:27","guid":{"rendered":"http:\/\/bargetto.com\/?p=877"},"modified":"2014-10-17T11:14:27","modified_gmt":"2014-10-17T18:14:27","slug":"braised-peaches-with-honey-sabayon","status":"publish","type":"post","link":"https:\/\/bargetto.com\/lavita\/braised-peaches-with-honey-sabayon\/","title":{"rendered":"Braised Peaches with Honey Sabayon"},"content":{"rendered":"<p><strong>by Richard Porto, The Donatello, San Francisco, CA<\/strong><\/p>\n<p><strong>Ingredients <\/strong><br \/>\n6 large fresh Peaches<br \/>\n7 egg yolks<br \/>\n3\/4 cup sugar<br \/>\n1\/4 cup honey<br \/>\n1\/2 cup CHAUCER&#8217;S Mead<br \/>\n1 pint whipping cream<\/p>\n<p><span class=\"footer A\"><b>Directions<br \/>\n<\/b><\/span><span class=\"footer A\"><strong>Peaches<\/strong><\/span><\/p>\n<ol>\n<li><span class=\"footer A\">Halve the peaches an brush the skin side with melted butter<\/span><\/li>\n<li><span class=\"footer A\">Place the peaches under the broiler and cook until the skins begin to brown and bubble.<\/span><\/li>\n<li><span class=\"footer A\">Turn the peaches over and cook the same, about 2 minutes.<\/span><\/li>\n<li><span class=\"footer A\">When cool, remove and set aside.<\/span><\/li>\n<\/ol>\n<p><span class=\"footer A\"><strong>Honey Sabayon<\/strong><\/span><\/p>\n<ol>\n<li><span class=\"footer A\">Whip the cream until stiff and set aside.<\/span><\/li>\n<li><span class=\"footer A\">Mix the remaining ingredients and place over a hot water bath. Whipping continually until the mixture is thick and frothy.<\/span><\/li>\n<li><span class=\"footer A\">Remove from water bath and place over ice, stirring wuntil cold.<\/span><\/li>\n<li><span class=\"footer A\">Fold in the whipped cream an place in the refrigrator.<\/span><\/li>\n<\/ol>\n<p><span class=\"footer A\"><b>*To Assemble*<\/b><\/span><\/p>\n<ol>\n<li>Place a peach in the center of a plate and cover with the honey sabayon.<\/li>\n<li>Put honey in a squeeze bottle and make a fund design in honey sabayon.<\/li>\n<li>Surround the peach with fresh raspberries and sprinkle the whole plate with powdered sugar.
